This flavourful Thai meat salad (also called Laab) is light, refreshing and perfect for summer.  It can be customized for your taste preference and meat can be substituted with mushrooms or tofu.

Ingredients for 4 servings:

  • 1 lb meat (pork, chicken, beef, fish or shrimp) – use either ground meat, finely chopped or mince in food processor
  • 2 tbsp coconut oil
  • 1 tbsp or 2 cloves of garlic – minced, crushed, or paste
  • 2 medium shallots – chopped
  • 1 tsp chili paste, crushed chilies, or Bird’s eye pepper; add more for a spicier dish
  • ¼ cup chopped fresh ginger
  • 2-3 tbsp lime juice or juice from 1 lime
  • ¼ cup fish sauce or coconut aminos
  • 1/8 tsp sugar or swerve (optional)
  • ¼ to ½ cup each – chopped fresh mint, cilantro, basil
  • 8 lettuce cups

This salad can also be served with bean sprouts, sliced cucumber, sliced scallions and crushed peanuts

Preparation:

  • Heat oil in a pan and fry meat with shallots, garlic and chili until fully cooked, remove from heat and add fresh ginger – allow to cool slightly or prepare ahead of time
  • Dressing – mix lime juice, fish sauce, and sugar
  • Toss chopped herbs, dressing, and meat (add bean sprouts and scallions, top with peanuts and sliced cucumber if desired)
  • Serve in lettuce cups
