Fresh & Festive Black Bean Salsa

There’s nothing like the pop of colour and crunch that you get from eating fresh vegetables. For the gardeners and farmers market-goers reading, bookmark this recipe to enjoy in the summer with the full flavour of home-grown veggies from your garden harvest or market haul!

For a quick version, use canned black beans and enjoy this recipe in under a half hour. This recipe is gluten and dairy free and can make an easy dip or topping for a variety of dishes – it pairs great with white fish or grilled chicken.

Ingredients:
✔️ Corn – 1 can
✔️ Black beans – 1 can or 1/2 cup dried beans if cooking yourself
✔️ Red bell pepper – 1 bell pepper, diced, with seeds removed
✔️ Cilantro – 1/4 cup, chopped
✔️ Lime – 1 lime, juiced
✔️ Red onion – 1/2 small red onion, diced
✔️ Garlic – 1 clove
✔️ Green onion – 3 green onions, sliced
✔️ Tomato – 1 tomato, diced
✔️ Jalapeno pepper (optional) – 1 pepper, diced, with seeds removed
✔️ Salt and pepper to season
✔️ *If you are cooking your black beans, you may want to add onion, garlic, or other aromatics to your water when cooking for extra flavour!

Directions:
1. If you are cooking your beans, allow them to soak the night before or at least for a few hours before cooking. When ready to cook, drain your beans then add them to a pot and cover with about 4 inches of water (if adding aromatics to your pot, add them now, and remove them when the beans are done cooking). Bring to a boil, then after 10 minutes reduce to a simmer and cover to continue cooking for 1-2 hours or until tender. Check and stir occasionally and add water if needed. Strain beans when done and allow to cool before adding to your salsa.
2. Combine all ingredients in a medium-sized bowl and stir until well mixed. Serve with tortilla chips or as a topping for wraps, salad bowls, chicken, fish, or whatever you’d like!

June is thyroid awareness month! Did you know that thyroid hormones regulate every organ in your body, including the thyroid gland. And when your thyroid gland is under-functioning, everything in our bodies move slower, which is why we might feel sluggish all over, including how our minds work, how we metabolize, even how or bowels work.

So what we might chock up to symptoms of “getting older” or “menopause brain” are very often related to low thyroid function.

Is Cortisol Really the Problem?

Here’s what most people get wrong about cortisol in perimenopause and menopause-
It’s not always that we’re making more cortisol.
It’s that we’ve become more sensitive to it.

When estrogen drops, our buffering system weakens.
What used to feel like a minor stressor?
Now it hits harder. It lingers longer. It feels bigger.

It’s not that your life suddenly got more stressful.
It’s that your body is less equipped to process stress the way it used to.

So what happens?
You feel more wired.
You feel more tired.
You get stuck in brain fog, belly fat, and mood swings.
You don’t feel like yourself anymore because your system feels more sensitive now.

This isn’t about eliminating cortisol.
We need cortisol. It’s essential. It’s part of your survival.

Potato Leek Soup

This creamy, comforting potato leek soup is more than just a cozy meal. It’s packed with nutrients that support digestion, hydration, and overall health.

✔️ Rich in fibre to help keep things moving
✔️ Hydrating to support energy and skin health
✔️ Naturally gluten-free and vegetarian and gentle on the gut

Leeks and potatoes are both great sources of prebiotic fibre, which feed the good gut bacteria that support digestion, mood, immune function, and hormone metabolism.

Save this one for your next meal prep - your body will thank you!

Ingredients:
✔️ 1 tbsp olive oil or butter
✔️ 3 large leeks, dark green parts removed, roughly chopped, and carefully washed to remove grit
✔️ 2 cloves garlic, minced
✔️ 4 medium potatoes, peeled and cubed
✔️ 6 cups broth
✔️ Salt and pepper, to taste
✔️ Optional: fresh herbs like parsley or chives for garnish

Directions:
1. Heat oil or butter in a large pot over medium heat.
2. Once hot, add leaks and cook until soft, 5-6 minutes. Add the garlic and cook until fragrant, about another minute.
3. Add the cubed potatoes and broth and bring to a boil
4. Reduce to a simmer and continue to cook on low heat, covered, for another 15-20 minutes or until potatoes are tender.
5. When done, use an immersion blender or let cool slightly and transfer to a standing blender. Blend until smooth or your desired consistency.
6. Season with salt and pepper to taste and add any herbs for garnish.
7. Enjoy!
