Ingredients:
- 2 cups rolled oats
- 1 cup almond flour (you can also use all-purpose or a gluten-free all-purpose flour blend)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup honey (or other liquid sweetener – maple syrup, yacon syrup, etc)
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 large apple, grated (about 1 cup)
- 1/2 cup chopped walnuts
Directions:
- Before you start, preheat your oven to 350°F and prepare your baking sheet by lining it with parchment paper.
- Start by mixing your rolled oats, flour, cinnamon, baking soda, and salt in a large bowl.
- In a separate medium-sized bowl, add honey (or other sweetener), applesauce, melted coconut oil, and vanilla extract. Stir to combine.
- Add the wet mixture into the dry mixture and stir until ingredients are well incorporated.
- Fold in the grated apple and chopped nuts.
- Drop spoonfuls of cookie dough onto your baking sheet, then press cookies down with a fork or the back of your spoon to flatten slightly.
- Bake for 13-15 minutes, until golden-brown.
