This vibrant carrot mango smoothie combines antioxidant-rich carrots and mangoes with the tropical flavour of coconut milk, refreshing strawberries, and a hint of earthy cardamom.
Carrots, famous for their beta-carotene content, are also a rich source of gut-friendly fibre and other anti-oxidants.
Aside from being arguably one of the most delicious fruits on the planet, mangoes also provide beta-carotene and fibre, along with significant amounts of vitamin C.
This recipe is dairy-free, gluten-free, and vegan.

Ingredients:
1 whole ripe mango, diced, or 1/2 – 1 cup frozen mango chunks
1 medium carrot, grated
1/2 cup fresh or frozen strawberries
1/2 tsp cinnamon
1/2 tsp cardamom
1/2 cup canned coconut milk
1/2 cup water
1 tbsp maple syrup (optional)
Add-ins: 1/2 scoop protein powder and/or 1 tbsp chia seeds or hemp hearts
Directions:
Combine all ingredients in a blender and blend until smooth.
Taste before adding sweetener. If you are using a sweetened protein powder, you will likely not need the maple syrup.
