Fresh and festive Watermelon salsa

Ingredients:

2 cups watermelon, diced

1 orange or yellow bell pepper, diced

1/2 jalapeno pepper, diced

1/4 onion, diced

2 tbsp chopped parsley

Juice of 1 lime

2 tbsp feta cheese (optional)

Salt and pepper to tast

Directions:

Chop and dice all vegetables and stir to combine. Add lime juice, feta (if using) and seasonings.
