These delicious bran muffins will add fibre to your morning meal. If you bake a batch of these on the weekend, they make a great easy breakfast all week long!
Ingredients
- ½ cup blanched almond flour
- ½ cup golden flaxmeal
- 1 tsp. baking soda
- ½ tsp. celtic sea salt
- 6 dates
- 3 eggs
- 2 tbsp. olive oil
- ¼ cup water
- ¼ cup sesame seeds
- ¼ cup sunflower seeds
- ½ cup raisins
Directions
- In a large bowl combine almond flour, flax meal, baking soda and salt.
- In a Vitamix blend dates, eggs, olive oil and water on high speed until very smooth.
- Mix wet ingredients into dry, then stir in sesame seeds, sunflower seeds and raisins.
- Spoon batter into lined muffin pan.
- Bake at 350° for 20-25 minutes.
- Cool and serve with a dollop of organic butter to add some good fats to your morning!
Recipe makes one dozen muffins.
