Healthy Freezer Fudge Recipe

Healthy Freezer Fudge Recipe – This is an easy and fun recipe that kids can easily make for their Mom for Mother’s Day.  It also happens to be delicious – the perfect combo of sweet, salt, fat, and chocolate.  Just remember to supervise little ones over the stove!

Healthy Freezer Fudge Ingredients:

1 cup pure nut butter, no sugar added (peanut or almond works well but any will do)

¼ cup coconut oil

1 tbsp honey

½ tsp salt

½ cup *chocolate chips – or more if you want it really chocolatey!

Healthy Freezer Fudge Instructions:

Line the bottom of a square baking dish with parchment or wax paper (this makes it easier to get the fudge out once it’s frozen).  Melt the nut butter, coconut oil, honey, and salt in a saucepan.  Whisk together until well combined and hot (but not boiling), then pour into baking dish.  Sprinkle chocolate chips on top and use a fork or a butter knife to gently swirl them into the hot liquid until they are melted.  Place baking dish into freezer until fudge is solid, then cut into pieces for serving.  Keep in freezer until ready to eat.

*For the chocolate chips, I use stevia sweetened ones in order to keep the sugar content of this recipe down without compromising the taste.  There are 2 brands available – Krisda or Lily’s – and one or the other can be found at most health food stores OR in the health food section of most grocery stores.
