Hearty & Satisfying Bean-Free Chilli

Indulge in a satisfying bowl of this high-protein beanless chilli.

Beans and legumes can be hard to digest, especially if you don't eat them very often, but this chilli is still brimming with tender meat, colourful vegetables and flavourful seasonings.

Ingredients:
✔️ 1 lb lean ground beef (you can also use ground turkey or chicken)
✔️ 1 tbsp olive or avocado oil
✔️ 1 large onion, diced
✔️ 4 cloves garlic, minced
✔️ 1 bell pepper, diced
✔️ 1 zucchini, diced
✔️ 2-3 chipotle peppers in adobo sauce, diced
✔️ 1 tbsp adobo sauce (from the chipotle pepper can)
✔️ 2 tbsp cocoa powder
✔️ 14 ounce can diced tomatoes, with juice
✔️ 2 tbsp tomato paste
✔️ 1 cup broth (you can use vegetable, chicken, or beef)
✔️ 2 tbsp chilli powder
✔️ 1.5 tbsp ground cumin
✔️ 2 tsp garlic powder
✔️ 1 tsp paprika
✔️ Salt and pepper to taste

Directions:
1. In a large pot, heat oil over medium heat. When hot, add the meat to the pot and cook until no pink remains, breaking it into smaller pieces as it cooks.
2. Add the chopped onion and garlic to the pot with the meat, and cook for 3-5 minutes until softened.
3. Add the diced zucchini and bell pepper and cook for 2-3 minutes until starting to soften.
4. Add the diced chipotle peppers, extra adobo sauce, and cocoa powder to the pot and stir until the sauce and cocoa powder is evenly distributed.
5. Add the diced tomatoes in juice, tomato paste, and broth. Stir everything to combine.
6. Add seasonings and stir.
7. Bring everything to a boil, then reduce heat to low, cover and let simmer for 25-30 minutes.
8. Taste and adjust seasonings as needed.
9. Serve hot and enjoy!

Butternut Squash Soup

This velvety butternut squash soup is comfort in a bowl on a chilly fall day and uses simple seasonal ingredients. Not only is it delicious, but the vitamin A, vitamin C, and fibre in this squash are great for your skin, gut, and immune system. This recipe suits gluten-free and dairy-free diets.

Ingredients:

👉 1 medium-sized butternut squash, peeled with seeds removed and cut into 1 inch cubes
👉 1 tablespoon olive oil or avocado oil
👉 1 medium onion, diced
👉 2 cloves garlic, minced
👉 1 medium carrot, diced
👉 1 medium apple, peeled and sliced
👉 4 cups vegetable or chicken broth
👉 1 inch knob of ginger, grated
👉 1 teaspoon ground cinnamon
👉 Salt and pepper to taste

Directions:

Heat the oil in a large pot over medium heat. Once oil is hot, add diced onion and sauté until translucent.
2. Add the minced garlic and grated ginger and cook for another minute until fragrant.
3. Add the cubed butternut squash, diced carrot, and sliced apple to the pot and sauté for 2-3 minutes.
4. Pour in the broth, enough to cover the vegetables. Bring to a bowl, then reduce heat, cover, and let simmer for 20-25 minutes.
5. Blend soup with an immersion blender or in batches in a regular blender. If you want a chunkier soup, separate half of your soup to blend, then pour back into your pot and stir to combine.
6. Add the ground cinnamon, salt, and pepper. Stir well and simmer for another 5-10 minutes.
7. Taste and adjust seasonings as needed. Add more broth if you want to thin your soup out.
8. Serve hot and enjoy!

Savoury Stuffed Acorn Squashed

This hearty fall dish features protein-rich lentils and earthy, fibre-loaded mushrooms packed into acorn squash, a versatile seasonal vegetable that is packed with immune-supportive vitamin C, vitamin A, and antioxidants.

This lentil and mushroom stuffed squash also makes an excellent gluten-free and dairy-free option to keep in mind for the holidays.

Ingredients:
✔️ 1 acorn squash, halved and seeds removed
✔️ 1/2 cup green or brown lentils, rinsed
✔️ 1 1/2 cups cups vegetable broth
✔️ 1 tablespoon olive oil
✔️ 1 onion, diced
✔️ 2 cloves garlic, minced
✔️ 1 cup mushrooms, chopped
✔️ 1 teaspoon dried thyme
✔️ Salt and pepper to taste

Directions:
1. Preheat oven to 375°F
2. Place the squash halves cut side down in a baking dish. Add about ¼ inch of water to the dish, then bake the squash for 30 minutes, or until starting to soften.
3. Pour the vegetable broth into a saucepan and add lentils. Bring to a boil, then reduce heat to low. Cover and cook for about 20 minutes.
4. Meanwhile, add olive oil to a frying pan. Add onion and garlic and cook for a few minutes until translucent.
5. Add chopped mushrooms, thyme, and salt and pepper. Continue to cook until you have cooked the moisture out of the mushrooms.
6. When the lentils are done, combine them with the mushroom mixture.
7. When squashes have cooked for 30 minutes, remove them from the oven and stuff each half with the lentil and mushroom mixture.
8. Return the stuffed squashes to the oven and bake for an additional 30 minutes, until easily pierced with a fork.
