Ingredients:

1 bag baked tortilla chips

1 can black beans, rinsed and drained, or 1.5 cups cooked black beans

1 tbsp avocado or olive oil

1/2 small red onion, diced

1 tsp smoked paprika

3 cloves garlic, minced

1 tbsp lime juice

Salt and pepper to taste

Additional Toppings: 

1 avocado, chopped

1 red bell pepper, diced

1/4 cup cilantro, chopped

2 green onions, diced

1 small jalapeno, sliced or 2 tbsp pickled jalapenos (optional)

1/4 cup black olive slices (optional)

Dairy-free cheese sauce, drizzled on top or on the side for dipping

Salsa, for dipping

Directions:

  1. Make the dairy-free cheese sauce according to the recipe.
  2. Make your seasoned black beans:
    • Heat 1 tbsp oil in a skillet over medium heat
    • Add red onions, salt, pepper, and smoked paprika.
    • Cook, stirring often, for about 6 minutes, then add garlic.
    • Cook for another minute or so until fragrant, then add black beans.
    • Stir to combine and heat until warm (about 2-3 minutes)
    • Add lime juice and toss to combine. Add additional salt and pepper to taste.
    • Remove from heat and set aside.
  3. Arrange chips on a large serving platter or on multiple plates for individual servings.
  4. Sprinkle on cooked black beans and other desired toppings, then drizzle with dairy-free cheese sauce.

Dairy-Free Nacho Cheese

1 cup raw cashews

2 tbsp fresh lemon juice

1 tbsp olive oil or avocado oil

3 tbsp nutritional yeast

1/2 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp chili powder

1/2 tsp turmeric

1/2 tsp salt, or more to taste

3/4 cup hot water, or more if needed

Combine all ingredients in a high-speed blender and blend until creamy. Start by adding 3/4 cup water, then slowly add more as needed until you’ve reached a drizzle-able consistency.
