This creamy dairy-free dressing is customizable and a great way to use herbs you might have sitting in your fridge or growing in your garden.
I used a combination of dill and cilantro, but you can use whatever herbs you have or prefer! Parsley, chives, tarragon, and basil all work well.
The sunflower seed butter lends a creaminess and adds healthy fat and protein to this recipe.
If you have a high powered blender, you can blend the whole sunflower seeds. Otherwise, using sunflower seed butter will help to ensure a smooth finished product.
Ingredients
1 tbsp avocado or olive oil
1 cup fresh herbs (I used half cilantro and half dill)
1 green onion
1 tbsp capers
Juice of 1 lemon
½ cup water, or more to desired texture
½ cup sunflower seed butter
Directions
Blend all ingredients in a blender or food processor until smooth. If needed, add more water and blend until you reach the desired texture.
Enjoy as a salad dressing, veggie dip, or sauce for rice bowls.
