Ingredients:

  • 2 cups rolled oats
  • 1 cup almond flour (you can also use all-purpose or a gluten-free all-purpose flour blend)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup honey (or other liquid sweetener – maple syrup, yacon syrup, etc)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 large apple, grated (about 1 cup)
  • 1/2 cup chopped walnuts

Directions:

  1. Before you start, preheat your oven to 350°F and prepare your baking sheet by lining it with parchment paper.
  2. Start by mixing your rolled oats, flour, cinnamon, baking soda, and salt in a large bowl.
  3. In a separate medium-sized bowl, add honey (or other sweetener), applesauce, melted coconut oil, and vanilla extract. Stir to combine.
  4. Add the wet mixture into the dry mixture and stir until ingredients are well incorporated.
  5. Fold in the grated apple and chopped nuts.
  6. Drop spoonfuls of cookie dough onto your baking sheet, then press cookies down with a fork or the back of your spoon to flatten slightly.
  7. Bake for 13-15 minutes, until golden-brown.
