Ingredients:

10 medium apples

6 cups water

2 cinnamon sticks

4 whole cloves

1 orange, washed and sliced (leave the peel on)

1 inch knob of fresh ginger, peeled and sliced

Optional: Honey or maple syrup to taste

Directions:

  1. Place all dry ingredients together in a large pot then pour in the water to cover.
  2. Bring to a boil over high heat, then reduce to low heat and let simmer uncovered for about an hour.
  3. After an hour, use a potato masher to mash the ingredients in the pot to help release more of their flavour.
  4. Remove the pot from the heat and let cool for 15-30 minutes.
  5. Strain the mixture through a fine mesh strainer into another large pot.
  6. Taste your cider and if you think it needs more sweetener, rewarm it gently over low-medium heat and stir in honey or maple syrup until you reach your desired sweetness.
  7. Enjoy your spiced apple cider warm or refrigerate!
