- 1 cup dry white rice
- 2 cups water
- 2 chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt

- 1 medium zucchini, sliced
- 1 medium carrot, sliced into thin rounds
- 1 red bell pepper, sliced
Sauce:
- 1 tbsp freshly grated ginger
- 1-2 tbsp tamari
- 1 tbsp lemon juice
