Ingredients:

1 cup dry wild rice, rinsed

About 2 cups water or gluten-free chicken or vegetable broth (plus more as needed)

2 tbsp olive oil or butter

1 small onion, finely chopped

2 cloves garlic, minced

2 celery stalks, diced

1 small carrot, finely diced

1 tsp dried sage

1 tsp dried thyme

½ tsp dried rosemary

Salt and black pepper, to taste

¼ cup chopped fresh parsley

¼–½ cup additional broth (as needed, for moisture)

Optional add-ins:

  • ¼ cup dried cranberries

  • ¼ cup chopped walnuts or pecans

Directions:

  1. Cook wild rice in water or broth according to cooking instruction until rice is tender and most of the liquid is absorbed. Set aside to cool slightly.

  2. Heat olive oil or butter in a large skillet over medium heat. Add onion, celery, and carrot. Sauté for 5–7 minutes, until softened.

  3. Add garlic and cook for another 30 seconds, until fragrant.

  4. Stir in sage, thyme, rosemary, salt, and pepper.

  5. Add the cooked wild rice to the skillet and mix well. If needed, add additional broth a little at a time until the mixture is moist but not wet.

  6. Remove from heat and stir in fresh parsley and any optional add-ins. Adjust seasoning as needed.

  7. To stuff a turkey:  Loosely stuff the bird just before roasting.
    To bake as dressing: Transfer to a greased baking dish, cover, and bake at 350°F (175°C) for 25–30 minutes, uncovering for the last 5–10 minutes if you prefer a slightly crisp top.
