8 Glasses of Water a Day?

Ughhh! For many of us, drinking the recommended 8 glasses of water per day seems daunting. Some people are constantly thirsty and others just aren’t. I fall into the “just aren’t” category. But where there is a will, there is a way! And my way is fast and healthy soup recipes!

Healthy Soup is the Answer

I eat a lot of soup. Making nutritious soups can honestly be so simple and quick. And with every meal, you can be getting 2 cups of your needed water. Here are 3 of my favourite super easy recipes!

Curried Sweet Potato Soup

• Peel and chop 2 large sweet potatoes

• Boil until tender.

• Add 1 can of coconut milk and bring to a slight boil

• Add 1 tsp red curry paste (or to your taste) and simmer for 15 minutes.

• When you add the curry paste, you can also add in any vegetable and protein you would like. I usually add cooked chicken breast and small pieces of cauliflower.

Split Pea Soup

• 10 cups water or chicken stock

• 2 1/3 cup (500g) split peas

• 1 onion

• 2 stalks celery

• 4 carrots

• ½ tsp pepper

• 1 tsp salt

Instructions

• Rinse split peas

• Add to chicken stock

• Simmer for 30 minutes

• Add vegetables and seasoning and simmer another 30 minutes

Nutty Broccoli Soup

• 1 large head of broccoli

• 1 tsp ghee or olive oil

• 1 cup chopped leeks or onions

• 2 tsp Bragg Liquid aminos or tamari

• 1 tsp thyme

• 1 tsp marjoram

• 1 tsp nutmeg

• 1 tsp dill

• ½ tsp black pepper

• ½ cup almonds, chopped finely or 2 tsp almond butter

• 4 cups vegetable stock

• 2 tsp lemon juice

• 2 tbsp chopped fresh parsley

Instructions

• Cut the broccoli heads into florets and peel and chop the stalk.

• Heat the oil in a soup pot and add the leeks, aminos, herbs and spices.

• Saute for 2-3 minutes, then add the broccoli and almonds (if almond butter, add later)

• Saute for several minutes, stirring frequently.

• Add the stock and bring to a boil (add almond butter if using)

• Reduce heat and simmer until the broccoli is almost soft.

• Let the soup cool for 10 minutes and then blend with a hand blender.

• Reheat and add the lemon juice.
