I recently needed a small amount of pumpkin puree for a recipe the other day and all I had was a large 28 oz can. So after opening the whole can for a ½ cup of puree, I realized I was going to have to get creative and find some new ways to use my abundance of pumpkin puree. I modified a recipe I found on the internet and came up with these snack balls that are so delicious I just had to share them with you all.

I hope you enjoy them as much as I have (and my kids loved them too!).

Easy No-Bake Pumpkin Pie Snack Bites Recipe

Ingredients

  • 1 cup hulled sunflower seeds
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup pumpkin puree
  • 5-7 drops of Stevia OR 1-3 tbsp maple syrup
  • 1 tsp. vanilla extract
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground ginger
  • Pinch of nutmeg
  • Pinch of salt

Directions

  1. Place the sunflower seeds in a large food processor fitted with an “S” blade and process into a fine flour.
  2. Add in the coconut, pumpkin, vanilla, cinnamon, ginger, nutmeg and salt and mix until a sticky dough is formed.
  3. At this point, you can taste the batter and see if you’d like to make any adjustments– add in more ground sunflower seeds for a drier texture (hemp hearts or ground flax work well here too if you don’t want to grind up more seeds), more Stevia or maple syrup for sweetness, or more spices to taste.
  4. Use your hands to form dough into 1 inch sized balls. They will be a bit mushy and sticky at this point but they will firm up once they are in the fridge.
  5. If the dough is too soft to form balls, refrigerate for 30-60 minutes before rolling dough into balls.

These treats will keep in the fridge for up to a week, although I doubt they will last that long anyway!
