This is another healthy, kid-friendly recipe that is popular with adults as well.
I will confess that although I make these for the kids, I eat them often as well. They make a tasty and filling snack or a yummy after dinner treat. These are high in healthy fats, have no added sugar, and taste delicious. Sometimes I will add a few scoops of collagen powder to the mixture while blending, just to increase the protein content.
You can also use an ice cream maker to make this into ice cream. I often freeze the extra leftovers in small glass container, let it thaw slightly and give it a quick stir before eating. If I put it in my lunch bag with an ice pack, it’s usually just right for eating at lunch time.
Healthy Fudgsicles – Kid Friendly and Easy!
Ingredients
- 2 large, very ripe bananas
- 1 ripe avocado
- 1 can full fat coconut milk ( I use Sobey’s organic brand)
- 1/3 cup raw cacao or pure cocoa powder (I use Bulletproof upgraded chocolate powder)
- 1 tsp vanilla
- Optional: 3-4 drops of vanilla flavored stevia (this enhances the sweetness without giving a “stevia” after taste)
Directions
Blend all ingredients in a high speed blender until smooth. Pour into popsicle molds and freeze.
Makes 6 large popsicles + a bit left over for smaller popsicles or “ice cream”.
