These tangy bite-sized energy balls are loaded with fibre and healthy fats! They make a great post-workout or midday snack.
These healthy treats don’t require baking and keep for about a week in the fridge. They are also gluten-free and dairy-free!

Ingredients:
1 cup rolled oats
1 cup pitted dates
Zest and juice of 1 lemon
½ cup unsweetened shredded coconut
½ cup raw cashews
1 tbsp maple syrup or other sweetener (optional)
Pinch of salt
Directions:
- Pulse all ingredients in a food processor or high speed blender until mixture is starting to clump together and all ingredients are finely chopped. Continue to blend until mixture has a dough-like consistency and can hold together
- Take a spoonful of the mixture at a time and roll it into bite-sized balls. Place balls on a baking sheet and refrigerate for at least 30 minutes or until firm.
- Transfer to an airtight container and store them in the fridge for an easy snack later (or now)!
