This tasty roasted beet salad gets a burst of flavour from a fresh citrus dressing and packs a punch of health benefits. Beets are truly little nutrient powerhouses! They’re loaded with healthy vitamins and minerals, like vitamin C, folate, potassium, and iron. They’re also rich in fibre, which is great for your gut health and helps you to feel full. 

Fresh garden beets for roasted beet salad

Beets are also famous for containing nitrates, which are good for your heart and help support healthy blood flow. They contain a bunch of antioxidants, including glutathione, which helps with detoxification, supporting your body’s “cleaning crew”.

Ingredients:

4 cups salad greens

4 medium-sized beets

2 tbsp olive oil 

Salt and pepper

Toppings & Dressing

2 oranges, peeled and segmented

¼ cup crumbled feta or goat cheese

¼ cup chopped toasted almonds or pecans

3 tbsp olive oil 

2 tbsp freshly squeezed orange juice

1 tbsp lemon juice

1 tbsp honey 

Salt and pepper to taste

Directions: 

Roast the beets 

  1. Trim and discard the beet roots and stems, then wash the beets thoroughly. Coat each beet with olive oil and wrap individually in a square of tin foil. 
  2. Place foil-wrapped beets on a pan and bake at 400 degrees for about an hour or until you can easily pierced with a fork.
  3. Remove from oven, unwrap foil packets and allow to cool enough to handle. 
  4. You should now be able to easily peel the beet skin. Then cut beets into 1 inch cubes. 

Whisk up your dressing

  1. Whisk together olive oil, orange juice, lemon juice and honey. Add salt and pepper to taste. 

Now assemble your salad!

  1. In a large bowl, toss your greens with just enough of your dressing to coat them. 
  2. Add your remaining ingredients, including the roasted beets. 
  3. Reserve the remaining dressing and drizzle over your salad just before eating.
