These tangy bite-sized energy balls are loaded with fibre and healthy fats! They make a great post-workout or midday snack. 

These healthy treats don’t require baking and keep for about a week in the fridge. They are also gluten-free and dairy-free!

lemon zest for lemon coconut energy balls

Ingredients:

1 cup rolled oats

1 cup pitted dates

Zest and juice of 1 lemon

½ cup unsweetened shredded coconut

½ cup raw cashews

1 tbsp maple syrup or other sweetener (optional)

Pinch of salt

Directions: 

  1. Pulse all ingredients in a food processor or high speed blender until mixture is starting to clump together and all ingredients are finely chopped. Continue to blend until mixture has a dough-like consistency and can hold together
  2. Take a spoonful of the mixture at a time and roll it into bite-sized balls. Place balls on a baking sheet and refrigerate for at least 30 minutes or until firm. 
  3. Transfer to an airtight container and store them in the fridge for an easy snack later (or now)!
