Savoury Herb-Roasted Pumpkin Seeds


1 1/2 cups raw pumpkin seeds

2 tablespoons olive oil

2 teaspoons dried herbs (such as rosemary, thyme, or oregano)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon pepper


Cinnamon Roasted Pumpkin Seeds


1 1/2 cups raw pumpkin seeds

1 tablespoon melted coconut oil

1-2 tablespoons pure maple syrup or honey (adjust to taste)

1 teaspoon ground cinnamon or pumpkin pie spice

1/4 teaspoon salt

1/2 teaspoon vanilla extract


  1. Preheat your oven to 300°F.
  2. Toss your dried seeds with the oil and seasonings until well coated.
