Gluten Free Granola

Grain free, low car, gluten free and keto friendly.

I invented this recipe after my kids saw their cousin eating a bowl of Lucky Charms and begged to have some. I figured I could come up with something healthy but delicious that would satisfy their taste buds and make them forget about sugary, store bought cereal. This granola is low carb, gluten free, and keto-friendly. It’s very filling so a little goes a long way. My kids loved it and prefer to eat it with full fat coconut milk poured on top. Enjoy!

Gluten Free Granola – Ingredients

  • 1 cup raw walnuts
  • 1 cup raw pecans
  • 1 cup raw sunflower seeds
  • 1 cup raw pumpkin seeds
  • 1 cup shredded coconut
  • 1 cup hemp hearts
  • 1 tbsp cinnamon
  • 1 tbsp ground ginger
  • 1-2 tsp salt*
  • 1/3 cup of liquid sweetener (I use yacon syrup but you could use honey or maple syrup too)
  • ¼ cup of unsalted butter (coconut oil works too)
  • 1 tbsp vanilla

Instructions

Preheat oven to 350F. Line 1 large or 2 small baking sheets with parchment paper.

Place walnuts and pecans in a food processor and pulse until they are coarsely chopped. Add sunflower and pumpkin seeds, coconut, and hemp hearts. Pulse again until a fine, granola-like texture is achieved. Transfer granola mixture to a large mixing bowl and sprinkle cinnamon and ginger on top.

Melt butter in a saucepan. Add sweetener, salt, and vanilla. Stir to combine and then pour over top of granola mixture. Use a spatula or a large spoon to mix all ingredients together until the granola is evenly saturated with butter and syrup. Transfer to baking sheets and bake in the oven for 10-15 minutes, until the granola is golden brown on top.

*I like my food salty (it brings out the sweetness), but if you prefer to go easier on the salt, OR if you only have salted butter, start with 1 tsp of salt, and then taste the mixture before it goes onto the baking sheet. If tastes a bit bland, continue adding salt ½ tsp at a time until desired taste is achieved.
